Fiber-Ful Recipes: Mixed Berry Pancakes With Berry Sauce

Mixed Berry Pancakes with Berry Sauce 
(Makes 3 pancakes; serves 1)

Ingredients

1/2 cup frozen mixed berries

1/4 cup all-purpose flour

1/2 tsp. baking powder

1/2 scoop Bellway Super Fiber + Fruit in Mixed Berry (about 1¼ tsp.)

1/2 tsp. pure vanilla extract

1/2 cup oat milk or other non-dairy or dairy milk of choice 

1/2 tablespoon butter or oil 

Greek yogurt, for serving 

Directions

  1. Place berries and 2 tablespoons water in a small saucepan with a lid. Cook covered over medium, stirring occasionally and lightly mashing some berries with a fork, until softened, about 10 minutes. Set aside. 
  2. Mix flour and baking powder in a small bowl. 
  3. Stir together Bellway Super Fiber powder, vanilla, and oat milk in a separate medium bowl until well combined. Whisk in flour mixture until smooth and no dry spots remain. Let sit until thickened, about 2 minutes. 
  4. Coat a large nonstick skillet with butter or oil and heat over medium. Add batter, about ¼ cup for each pancake, and cook, until golden on the bottom and bubbles form on top and around the edges (lowering heat to medium-low if browning too quickly), 3 to 5 minutes. Flip and cook until golden, 3 to 5 minutes more. Serve pancakes topped with berry sauce and a dollop of yogurt.
